We are looking for an experienced and qualified 3 year of experienced Executive Chef to Lead our kitchen’s activities and prepare high end meals with a fine dining experience for our high end guests. You will also oversee the operations of the restaurant and dining facility, the food that comes out of the kitchen, from conception to execution. This person will be the first in command in the facilities and will create and inspect dishes before they arrive to the customers ensuring high quality and contentment.
The position requires leading and working closely with other cooks, creating menu items and determining food inventory needs, staffing of the kitchen, developing menu offerings, forecasting supply needs and estimating costs. It is expected that the Executive Chef is able to make sure the restaurant meets all regulations, including sanitary and safety guidelines.
Responsibilities
Control and direct the food preparation process and any other relative activities
Construct menus with new or existing culinary creations ensuring the variety and quality of the servings
Approve and “polish” dishes before they reach the customer
Plan orders of equipment or ingredients according to identified shortages
Arrange for repairs when necessary
Remedy any problems or defects
Be in charge of hiring, managing and training kitchen staff and oversee the work of subordinates
Estimate staff’s workload, maintain records of payroll and attendance
Comply with nutrition and sanitation regulations and safety standards
Foster a climate of cooperation and respect between co-workers
Order and oversee Community Yurt Breakfast, Snacks Lunch items and Dinner for all employees of VHSG, as well as Tsaina Lodge
Requirements
Proven experience as an
Executive Chef or Lead Chef
for
3 years and certificates
Exceptional proven ability of kitchen management
Ability in dividing responsibilities and monitoring progress
Outstanding communication and leadership skills
Up-to-date with culinary trends and optimized kitchen processes
Good understanding of useful computer programs (MS Office, restaurant management software, POS)
Credentials in health and safety training & Valid handler's permit for handling food Degree in Culinary science or related certificate is a plus
Housing is included, meal plan for $70 per week. There is an end of year bonus based on merit of $200-$600. There is an end of year day of Skiing from Heli if you choose or touring by Heli along with a Boat Trip for employees who don't ski.
