As a member of the kitchen team it is your responsibility to maintain the four core principles of Denali Brewpub:  Safety, Quality, Efficiency and Ownership.

Qualifications:

- Prior kitchen experience preferred.

- Alaska Food Handler card.

- High level of attention to detail.

- Ability to think and act creatively, while conforming to existing standard operating procedures and DEC regulations.

- Must be in good physical condition.

- Ability to sit/stand/bend/walk and maintain manual dexterity for duration of work period.

- Must be able to work independently.

- Able to lift 55 lbs. and move at least 165 lbs., and work in extreme hot and cold environments.

- Have a flexible schedule, team player.

Duties will include:

- Maintain appearance, cleanliness and general ambiance in accordance with the culture of Denali Brewpub.

Line Cook:

- Become proficient at execution of required stations.

- Maintain clean, safe stations.

- Develop a strong understanding of recipes and food preparation.

- Maintain food cost by using portion controls and minimizing loss.

- Minimize bio waste through food reclamation and grease management programs.

- Assist other stations as needed, i.e. Prep Cook and DMO.

- Other duties as assigned by management.

Prep Cook:

- Develop a strong understanding of recipes and food preparation.

- Maintain clean, safe stations.

- Maintain food cost by using portion controls and minimizing loss.

- Minimize bio waste through food reclamation and grease management programs.

- Assist DMO as needed.

- Other duties as assigned by management.

DMO:

- Clean and stock service items and kitchen equipment.

- Maintain a clean, safe station.

- Maintain cost by minimizing loss.

- Minimize bio waste through food reclamation and grease management programs.

- Clean and organize kitchen and equipment.

- Carry bus tubs as needed.

- Assist Prep Cooks as needed.

- Other duties as assigned by management.
