Job Description

The Department of Corrections, Division of Institutions, is recruiting for a Food Service Journey at the Goose Creek Correctional Center (GCCC) located in Mackenzie Point, Alaska.

What You Will Be Doing:

Under the guidance of the Food Service Leads and Food Service Supervisor, this role focuses on helping the kitchen run smoothly, safely, and efficiently. Daily duties include:

Monitoring inmate kitchen workers and helping them stay on track with cooking, baking, serving, and kitchen sanitation.

Helping make meals for the facility and making sure those with dietary restrictions get the proper meal.

Overseeing the preparation of all baked goods - all made with in-house ingredients.

Coordinating food service for special events.

The Working Environment You Can Expect:

Goose Creek Correctional Center is a minimum/medium custody facility that houses up to 1500 inmates and employs over 350 staff. You will be working in an institutional setting with inmates daily.

Who We Are Looking For:

We are interested in candidates who possess some or all of the following position specific competencies:

Food Service: Knowledge of preparing and serving food for consumption.

Interpersonal Skills: Shows understanding, friendliness, courtesy, tact, empathy, concern, and politeness to others; develops and maintains effective relationships with others; may include effectively dealing with individuals who are difficult, hostile, or distressed; relates well to people from varied backgrounds and different solutions; is sensitive to cultural diversity, race, gender, disabilities, and other individual differences.

Oral and Written Communication: Expresses information (for example, ideas or facts) to individuals or groups effectively, taking into account the audience and nature of the information (for example, technical, sensitive, controversial); makes clear and convincing oral and written presentations; listens to others, attends to nonverbal cues, and responds appropriately.

Minimum Qualifications

Minimum Qualifications

Any combination of training and/or experience that provides the applicant with the knowledge, skills, and abilities to successfully perform the essential duties of independently planning, preparing, and serving food and drink.

Essential Core Competencies:

Knowledge of food terminology, measuring devices, kitchen equipment, and serving information;? and personal hygiene, general sanitation, and safe work standards to safely use and clean kitchen, food service equipment, and dining area.?

Applicable skill in weighing, measuring, and assembling ingredients to prepare beverages and foods for cooking or serving;? and serving beverages and foods in the proper portions, manner and sequence, and with proper table setting techniques.

The ability to communicate effectively with staff and customers, which may include the requirement to read, speak, write, and understand English;? keep records and complete forms following procedures;? recognize produce and food products which do or do not meet quality standards;? meet quality/quantity control, safety, and sanitation standards;? perform tasks in logical sequence;? select guidelines, standards, or procedures appropriate to the task;? do simple arithmetic calculations and record appropriately;? assist in preparing foodstuffs which meet the standards of taste, temperature, appearance, texture, and diet requirements, if applicable to the work assignment;? demonstrate a customer service orientation, and display sensitivity and interest in customer concerns, needs, and limitations;? and adapt to changing conditions, schedules, or meal requirements on short notice.

Position-Specific Competencies:

Journey level workers will be required to have the required skills to handle difficult problems encountered; have comprehensive knowledge of the subject or occupational area;? use judgment in determining actions; exercise independence in determining actions;? plan and lay out work (i.e. determine how to do one’s own work);? make appropriate choice among alternatives; complete work with only limited instruction and/or little or no advice; and proceed with work without having results or products generally reviewed in progress.

Additionally:

Knowledge of the practices, methods and procedures of volume food preparation, cooking times, and serving temperatures; food handling, storage, and rotation techniques to avoid cross contamination and recognize critical control points; and regular or modified diets/menus, content, and limitations.?

Applicable skill in preparing, seasoning, cooking, and baking the full range of foodstuffs which meet the standards of taste, temperature, appearance, texture, and diet requirements.

Ability to prepare several menu items simultaneously, which may include both hot and cold items; follow specific instructions related to preparing foods for modified diets, or for needs of??wildland fire fighting personnel; use dietary instructional manuals;?ensure adequate kitchen and food supplies and equipment repair; and plan and prepare meals for transport to field operations areas may be a unique requirement of some positions.

Starting salary may be approved up to Step D - $26.38, if criteria are met.
